Anybody who truly loves a roast chicken knows the crispy skin is the best part.
Chicken skin should therefore make a good base for a delicious condiment or perhaps a crust for a different protein.
Certainly it's easy enough to try to glue chicken skins to other things with Activa but I was leaning more along the lines of a post cooking textural flavorful crust for a lamb loin or perhaps a scallop.
I simply salted and roasted some chicken skins flat in the oven till they were golden and crisp.
The rest of the condiment is composed of
Roasted Chicken skin (predominantly)
Toasted Sesame Seed
Gingerbread
Salt
Pepper
Sugar
Fennel Pollen
This in fact worked very well with Scallops.

The idea of smoked chocolate soil came from eating a chocolate cupcake that was topped with Bacon bits and Sea Salt.
While I would not rush back for more, it certainly proved smoke and salinity have some affinity with chocolate.
Making smoked chocolate soil obviously required a dry medium since regular chocolate would melt.
The resulting mixture is composed of in specific ratio :
Smoked Dehydrated Chocolate Cake
Oreo Cookies
Atomized Chocolate
Cocoa Nibs
Muscovado Sugar
Sea Salt
On to the pairing with Pistachio Oil and Ice Cream.
