What is a Peach Pie.
Peaches, Butter, Flour, Sugar, Aromatics such as Nutmeg and Cinnamon, Lemon and Salt.
If you want to be fancy, add Peach eau de vie.
Today I found some excellent dried peaches which were used for a fantastic Peach Mostarda and decided to use the rest for peach pie ice cream. Among other things that make this entirely possible are the emulsifying properties of the Pacojet.
In my collaborations with Aki and Alex , one of the funny quotes overheard was that "we should be more intelligent than to simply throw an apple pie, cream and sugar into a blender to make apple pie ice cream".
The point is to reproduce an ice cream base that has all the elements of peach pie as listed above.
In this case it will be a standard glucose custard base, caramelized milk, brown butter solids, salt and lemon powder. The results of the first batch will no doubt provide a frame of adjustment for the final recipe.
Thanks to the gram scale, we can accurately record every trial for adjustment.
